Ingredients

Sponge Recipe:

  • 340 gram All-purpose flour
  • 2tsp baking powder
  • 2tsp baking soda
  • 2tsp vanilla Essence
  • 100 gram full fat milk
  • 4 tbsp lemon juice
  • 4 eggs (2 white , 2 yolk)
  • 300 gram sugar
  • 240 gram vegetable oil
  • 100 gram yogurt

Cream base:

  • Whip whippy cream
  • Add any compound you want
  • Seasonal fruits of your choice

Directions

Step 1

Prepare the Sponge Batter: Preheat oven to 170–180°C and grease cake pans. Whisk flour, baking powder, and baking soda in a bowl. Mix milk with lemon juice; let sit 2–3 minutes to make buttermilk. Beat eggs (2 whole + 2 yolks) with sugar until light and fluffy. Add oil and vanilla; mix well. Stir in yogurt and buttermilk until smooth. Gently fold in dry ingredients until just combined—do not overmix to keep the sponge soft.

Step 2

Bake the Sponge: Pour the batter into prepared cake pans. Bake for 30–40 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool completely before removing it from the pan.

Step 3

Slice the Cake Layers: Once the cake has cooled, trim the top if needed. Cut the sponge into 2 or 3 even layers using a serrated knife. Make sure the layers are even for a neat finish

Step 4

Prepare Sugar Syrup: Mix ½ cup water with 2–3 tablespoons sugar and stir until dissolved. Let it cool completely before using. This step helps keep your cake moist.

Step 5

Make Cream & Layer the Cake: Whip your whipping cream until soft peaks form, then add your preferred compound flavor such as vanilla, strawberry, or mango. Place the first sponge layer on your cake base, brush it with sugar syrup, and spread an even layer of cream. Add chopped seasonal fruits, then place the next layer on top. Repeat the same process for all layers

Step 6

Crumb Coat & Final Finish: Apply a thin layer of cream all over the cake to seal in crumbs. Chill the cake for 15–20 minutes. After chilling, apply a final smooth layer of cream and decorate with fruits or piping as desired.
