Ingredients
- Pitta Bread Croutons
- Cucumber
- Green n black olives
- Capsicum
- Sweet corn
- Coriander chopped
- Tomato
- Onion Rings
- Olive Oil
- Iceberg
- pinch of salt
- Mint leaves chopped
- Spring Onion only green part
For the Authentic Dressing:
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 tsp pomegranate molasses (traditional & essential)
- 1 small garlic clove, crushed
- ½ tsp sumac powder (key Middle Eastern flavor)
- Pinch of salt
- 1 large egg
- 1 tsp salt
Directions
Step 1
Prepare the Dressing: In a small bowl, whisk together olive oil, fresh lemon juice, pomegranate molasses, crushed garlic, sumac, and salt until well combined. Set aside to let the flavors develop.
Step 2
Assemble the Salad: In a large bowl, combine iceberg lettuce, cucumber, tomato, capsicum, sweet corn, olives, onion rings, spring onion greens, coriander, and mint. Sprinkle a pinch of salt and toss gently.
Step 3
Add the Crunch: Just before serving, add the pitta bread croutons and drizzle the dressing over the salad.
Step 4
Toss & Serve: Toss everything lightly so the croutons stay slightly crisp. Serve immediately for the best texture and flavor.
