Ingredients

For Katori:

  • 1 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1 tsp red chili powder
  • 1 tsp white cumin
  • 1/4 tsp Ajwain
  • 2 tbsp Desi Ghee
  • 50-gram butter
  • 1 egg

Chat Pati Chana Chaat:

  • 2 cups boiled chana
  • 1/4 cup chili garlic ketchup
  • 2 tsp brown sugar (optional)
  • 1/4 cup imli pulp
  • 1 medium onion
  • 2 deseeded tomatoes
  • 4 tbsp green coriander
  • 10 leaves coriander
  • 2 tsp chili flakes
  • 1/2 tsp or as required red chili powder
  • 1 fresh green chili
  • 2 tbsp lemon juice
  • salt as per required
  • 1 large egg
  • 1 tsp salt

Directions

Step 1

Prepare the Katori Dough: In a large bowl, combine all-purpose flour, salt, red chili powder, white cumin, and ajwain. Add desi ghee and butter and rub everything together with your hands until the mixture resembles breadcrumbs. Add the egg and mix well. Gradually add up to ½ cup water if required and knead into a firm dough. Cover and refrigerate for 1 hour.

Step 2

Shape & Bake the Katoris: Preheat oven to 180°C. Roll the chilled dough and cut into medium-sized circles. Gently place each circle into a cupcake or muffin mold, pressing lightly to shape into bowls. Bake for 25 minutes or until golden and crisp. Remove from oven and allow them to cool in the mold for 30 minutes so they firm up properly.

Step 3

Prepare the Chat Pati Chana Filling: In a mixing bowl, add boiled chana, finely chopped onion, deseeded tomatoes, green chili, and fresh coriander. Add chili garlic ketchup, imli pulp, brown sugar (if using), lemon juice, chili flakes, red chili powder, and salt. Mix everything well until the chana is evenly coated and flavorful.

Step 4

Assemble the Katori Chaat: Once the katoris are completely cooled and crispy, fill them generously with the prepared chana chaat mixture. Garnish with extra coriander, a drizzle of imli, or a squeeze of lemon if desired.

Step 5

Serve Fresh: Serve immediately to maintain the crispiness of the katori. These are perfect for Ramadan, tea-time gatherings, or party starters.
