Step 1
Prepare the Donut Dough: In a mixing bowl, combine 2 cups + 3 tbsp all-purpose flour, 3 tbsp sugar, ½ tsp salt, ¼ tsp nutmeg, and 7 g yeast. In another bowl, mix 1 egg, ½ cup whole milk, and 40 g melted butter. Gradually add the wet mixture to the dry ingredients and knead until smooth and elastic. Let the dough rise in a warm place until doubled in size.
Step 2
Shape & Proof the Donuts: Roll the risen dough into a smooth log and cut into equal portions. Shape each piece into a round donut or ball. Place on a parchment-lined tray and let them proof for 30–45 minutes until puffy.
Step 3
Fry or Bake the Donuts: Heat oil in a deep pan to 175°C. Fry the proofed donuts until golden brown on both sides. Remove and drain excess oil on paper towels. Cool slightly before filling.
Step 4
Fill with Custard & Serve: Prepare vanilla custard by heating milk with sugar and stirring until thick. Fill a piping bag with custard and inject it into each cooled donut. Optionally, dust donuts with powdered sugar or glaze. Serve immediately
