Directions
Step 1
Add the water, oil, and sugar to a heavy-bottomed saucepan. Place the pan over medium heat.
Stir gently with a whisk or spatula until the sugar starts to dissolve. Keep stirring until everything is smooth and there are no visible sugar grains left.
Tip: Use medium heat only — high heat can burn the mixture.
Step 2
Cook the Dough:
Add all the flour to the warm mixture at once.
Stir immediately and keep mixing over medium heat. The dough will come together, pull away from the sides of the pan, and form a smooth ball.
Cook for another 2–3 minutes until the raw flour smell disappears and the dough turns a light golden color.
Step 3
Cool and Add Eggs
Move the dough to a clean mixing bowl. Let it cool at room temperature until it feels warm but not hot (about 5–10 minutes).
Add the eggs one at a time. Beat well after each egg until it is completely mixed in.
Continue until the batter is smooth, glossy, and thick enough to pipe.
Step 4
Pipe the Puffs
Fit a Russian flower or tulip piping tip into a piping bag. Fill the bag with the batter.
Line a baking tray with parchment paper. Pipe mounds of batter — about 2–3 tablespoons each — roughly 5 cm wide.
Leave space between each mound so they can rise evenly.
Step 5
Bake the Puffs
Preheat your oven to the correct temperature for 10–15 minutes so it’s nice and steady.
Place the tray in the oven and bake for about 20 minutes, or until the puffs are fully risen and light golden.
After baking, leave them in the oven for another 5 minutes with the door slightly open. This helps them dry out and stay crisp without collapsing.
Remove from the oven and let them cool slightly before filling.
Step 6
Fill the Puffs
Make a small slit on the side of each cooled puff (be gentle so you don’t tear it).
Fill a piping bag fitted with a Russian flower tip with freshly whipped cream. Insert the tip into the slit and pipe cream slowly until the puff feels full and light.
Top each puff with fresh fruit — berries, kiwi slices, or mango pieces look beautiful and add natural sweetness.
Step 7
Finish and Serve
Melt some chocolate and drizzle it over the filled puffs in a nice pattern.
