Step 1
Prepare the starter: In a clean bowl or jar, combine all-purpose flour and water until you get a smooth mixture with no dry patches left. Cover it loosely and leave it at room temperature for 24 hours. This resting time helps the starter develop flavor and gives the flatbread a softer, more airy texture. By the next day, it should look slightly active and ready to use.
Step 2
Make the dough: Add the starter to a mixing bowl along with all-purpose flour, yeast, and water. Mix everything together until a soft dough starts to form. Once combined, knead the dough well until it turns smooth and elastic. The dough should feel soft and manageable, not too dry and not overly sticky. Cover it and let it rest until it becomes slightly puffy and relaxed.
Step 3
Fill and shape the flatbread: Take the rested dough and flatten it gently with your hands. Place the cheese in the center, then bring the edges together and seal it properly so the filling stays inside while cooking. Once sealed, carefully flatten and roll it out into a flatbread shape. Be gentle during this step so the cheese does not break through the dough.
Step 4
Cook and finish: Place the flatbread on a hot pan over medium to low heat and cook until both sides turn golden and the bread is fully cooked from inside. Flip as needed to get an even color and texture. Once done, brush the hot flatbread with garlic butter or crushed garlic mixed with butter so it melts beautifully over the surface. Finish with herbs or chili flakes if you like, then serve warm while the cheese is still soft and melty inside.
